Quick Sausage Soup

1 pound ground pork sausage
-3 tablespoons butter
-1 1/2 tablespoons garlic crushed
-1 1/2 tablespoons minced onion
-1 can beef broth
-1 cup heavy cream
-1 can green beans drained
-1 cup carrots cooked
-Pepper to taste

HOW TO PREPARE:




1.-
Brown ground pork sausage in skillet.

2.-In saucepan, melt butter.

3.-Add garlic and onions and brown in melted
butter.

4.-Add sausage and remaining ingredients.

5.-Heat thoroughly.

-1 bag Pork Rinds2 Eggs
-3 tablespoons oil 3 to 4

HOW TO PREPARE:



1.-
Beat the eggs in a bowl.

2.-Crush the pork rinds real good in a bag and pour into a separate bowl.

3.-
Heat the oil in a pan.

4.-Dip the cutlets first in the beaten eggs and then into the crushed pork rinds getting them fully coated.

5.-Fry cutlets in the oil until nicely browned and serve.

6.-Top with a fried egg to make it even better.

7.-Not like Mom used to make but not bad if you're hankering for some quick German grub!

Beef Stuffed With Peppers

-2 large green peppers
-1/4 cup chopped onion
-1/2 cup chopped tomato
-1 cup shredded cheddar cheese
-Pepper to taste oil for frying
-Salt

HOW TO PREPARE:



1.-
Core and deseed the peppers.

2.-Boil in salted water for 5 minutes for firmer peppers, don't boil.

3.-Rub the insides with a generous amount of salt.

4.-Brown the onion and beef in the oil, and the tomato and cheese to the pan.

5.-Spoom the beef mixture into the peppers, and place the peppers standing up in a small casserole dish.

6.-Cook at 350 for 20-25 minutes.

Caulif Broccoli Salad

INGREDIENTS:



-
1 lg head cauliflower 1 lg bunch broccoli
-1 sm onion or 4 green ones 1 pkg froz peas or pea pods 2 cups mayo
-1 cup sour cream 1 tsp garlic powder

HOW TO PREPARE:



1.-
Mix mayo, sour cream and garlic powder in a small bowl.

2.-Break caulif and broccoli into bite sized florets.

3.-Add onion.

4.-Toss sauce with broccoli, cauliflower and onion.

5.-Add peas last if using pods, cut into ¼ inch pieces.

6.-Refrigerate at least 4 hours or overnight.

Chicken Chilaquiles

INGREDIENTS:




-
1 whole chicken
-Cooked/deboned
-5 tortillas cut into strips
-1 cup shredded cheddar cheese
-1/2 cup Monterey jack
-1/2 cup sour cream
-1 clove garlic
-Chopped 2 serrano chilis, seeded
-2 lg tomatoes
-1/4 cup onion
-1 teasp. oregano
-Chopped 1/4 cup cilantro, chopped
-1 cup or more chicken stock
-1 tblsp olive oil

HOW TO PREPARE:



1.-
Boil chicken in water, remove when cooked, debone and cut into lg pieces.

2.-Cut tortillas into strips and deep fry till golden, drain, set aside.

3.-In large saute pan, heat olive oil and add tomatoes, chilis, onion, garlic, 1/2 cilantro and the oregano.

4.-Saute till all is cooked and little juice remains. Do not burn.

5.-Add the chicken stock and cook longer to meld flavors.

6.-Place all in blender and puree.

7.-Return to the saute pan and simmer with more stock into a nice thick sauce. Set aside.

8.-In layers, place the tortilla strips, chicken, cheeses into a 9x13 pan.

9.-Add the sour cream in dollops, the cheeses and remaining cilantro.

10.-Cover with the sauce and top with more of the shredded cheeses.

11.-Bake at 350 till hot, bubbly and the cheese on top is lightly browned.

Broccoli Beef with Fried Rice

INGREDIENTS:




-
2 pieces flank steak or any thin sliced beef about 1/2 pound
-1/2 head broccoli
-1/4 onion
-1/2 head cauliflower
-1 egg beaten Olive oil
-Soy sauce
-Garlic Salt
-1/4 cup water

HOW TO PREPARE:



1.-
Cut beef into strips Stir fry in olive oil on medium high heat, season slightly with Garlic salt.

2.-Add 1/4 cup water 1/2 head Broccoli (cut in small pieces) and sliced onion.

3.-Add and a splash of soy sauce and cook on medium heat until broccoli and onion are cooked, I like mine still crunchy.

4.-Cut the cauliflower florets into tiny pieces (like rice) Stir fry in olive oil, add a splash of soy sauce and garlic salt.

5.-Add 1 egg and stir fry until egg is cooked and cauliflower is just getting tender.

6.-If it still tastes like cauliflower add a little more soy sauce.

7.-Pour the broccoli/beef mixture over the "Fried Rice" and pretend you are in the Chinese restaurant!

8.-Makes enough for two meals.
