Gazpacho

Make: 6 servings

INGREDIENTS:
-2 cups low sodium vegetable broth
-2 cups tomato juice
-2 tablespoons lemon juice
-Half teaspoon hot sauce
-1 clove garlic, minced
-1 teaspoon salt
-1 green pepper, chopped
-1 cucumber, peeled, seeded, and chopped
-4 medium tomatoes, chopped
-1 onion, chopped

HOW TO PREPARE:
1.-In a large pot, combine the broth, tomato juice, lemon juice, hot sauce, garlic, and salt.
2.-Cook, uncovered, over medium heat, until the mixture comes to a boil.
3.-Add the vegetables. Return to a boil, reduce heat, and let simmer for 2 minutes.
4.-Remove from heat.
5.-Cover and refrigerate. Serve Cold.
